Short answer
A street stall can quote a lower headline price, but once pickup, entrance, lunch, and insurance are added, the total is often the same or higher, and you have less time to check the seller. Booking ahead costs nothing when no deposit is taken, and it secures sunrise jeeps and rafting seats in July, August, and over Christmas.

When booking ahead matters
Book a few days ahead for the private Batur sunrise jeep, which needs a car and driver planned the day before, and for any trip in July, August, or the Christmas and New Year weeks, when Bali is at its busiest. Rafting and ATV days with hotel pickup also need the car arranged in advance.
Booking on arrival works best for flexible plans in quieter months, especially if you are staying in Ubud and can self-meet at the arena or river.
